How Hot Is a Carolina Reaper, Really?
Scoville Heat Units (SHU) measure the concentration of capsaicin, the compound responsible for chilli heat. At 1.6-2.2 million SHU, a single Carolina Reaper can be enough to season a large pot of hot sauce or chilli con carne - most recipes only need a small fraction of one pod. First-time buyers are often surprised how far a little goes.

Safe Handling Tips
- Wear gloves. Capsaicin lingers on skin for hours and transfers easily to eyes, lips and other sensitive areas.
- Work in a ventilated area. Cutting or blending Reapers can release capsaicin into the air, which may irritate eyes and airways.
- Wash hands, knives and boards thoroughly after handling, even with gloves on.
- Start small. A quarter or half a pod is plenty for most home recipes.
- Keep away from children and pets.
How to Use Carolina Reapers
- Hot sauce: The classic use - blend with vinegar, garlic and salt, then ferment or cook down for a fiery, fruity hot sauce.
- Dried chilli flakes or powder: Dehydrate and grind for a shelf-stable seasoning you can dose a pinch at a time.
- Infused oils: Steep a small amount in oil for a chilli oil with serious heat.
- Curries and stews: A small piece goes a long way in a big batch of curry or chilli.
- Freezing: Reapers freeze well whole - handy for dosing out heat over time without waste.
