African-Style Fried Plantains (Dodo)

Ingredients:

  • 2 large ripe plantains
  • Vegetable oil, for frying
  • Salt, to taste

Instructions:

  1. Prepare the Plantains:

    • Peel the plantains and cut them into 1-inch thick slices.
    • You can either slice them straight across or diagonally for a more elegant presentation.
  2. Heat the Oil:

    • Heat the oil in a deep skillet or pot over medium-high heat. The oil should be hot enough to sizzle when you add the plantains.
  3. Fry the Plantains:

    • Carefully add the plantain slices to the hot oil, working in batches to avoid overcrowding the pan.
    • Fry the plantains until they are golden brown on both sides. This should take about 2-3 minutes per side.
    • Use a slotted spoon to remove the fried plantains from the oil and drain them on paper towels.
  4. Season and Serve:

    • Sprinkle the fried plantains with salt to taste.
    • Serve hot with your favourite dish, such as jollof rice, stew, or as a standalone snack.

Tips:

  • For a spicier flavour, add a pinch of cayenne pepper or chilli powder to the oil before frying the plantains.
  • To make the plantains extra crispy, you can double-fry them. After the first fry, let them cool slightly, then fry them again for a few more minutes.
  • For a healthier option, you can bake the plantains in the oven instead of frying them.
